In honor of National Tequila Day we thought we’d make something that your taste buds (and Instagram) will love! Hello, spiked Watermelon Mint popsicles.
They’re refreshing, tasty, and have a little kick (Tequila). If you want to make them kid friendly, just remove the alcohol!
The Ingredients:
- 1/4 cup water
- 1/4 cup sugar
- 1/3 cup fresh mint, torn coarsely
- 4 cups watermelon, cubed
- juice of 2 limes
- 1/3 cup tequila
- Popsicle mold + popsicle sticks
These popsicles take quite a time to freeze because of the alcohol, so we recommend making them a day or two before you plan on enjoying these treats! We froze ours for a solid 24 hours, making them just perfect!
Go ahead and cut your Watermelon into cubes and measure out your Tequila.
Next, take out your blender, Vitamix, or Nutri Bullet and toss your Watermelon cubes in along with your lime juice. Add as much or as little Lime juice as you prefer – making it your desired flavor.
Once your Watermelon and Lime juice are pureed, turn on that stove top and let’s make that Mint syrup! Take out a sauce pan and add your sugar, water, and mint. Stir until the sugar is dissolved and you see the syrup turn light green. Take it off the stove, let it cool down, and taste. If it isn’t minty enough for you, throw it back on the stove for a little bit longer. Then, take off the stove and let it cool down.
Add in the the Tequila and Mint syrup. Again, add a little more or a little less of each depending on how strong and how minty you would like your pops to be!
Mix the bowl, and pour into your popsicle molds. We added a little Lime slice to each for a little extra look and flavor.
Now’s the hard part, time to wait a day or two. We promise it’s worth it!
