There’s nothing more satisfying in the morning that warm, gooey pancakes. They are a sweet and satisfying breakfast staple that remind us of simpler times and home cooking with the family.
We had some extra homemade jam we from fresh berries and thought what better way to use them than making mini peanut butter sammys using bite-sized pancake patties? An Heirloom twist on this traditional recipe that is easy as it is delicious.
Ingredients:
- 1/4 cup milk
- 1 cup pancake mix
- 1 egg (fresh, cage free)
- 1 Tablespoon oil
- 6 oz smooth peanut butter
- 6 oz jam or jelly (we made ours!)
- 1/3 banana (optional)
- 1 Tablespoon of Honey (optional)
Step 1: Prep Batter
First, combine dry and wet ingredients in a bowl and mix well until batter is smooth. Note: we mashed up a bit of banana and added it into the banner along with a touch of honey for added fruity flavor.
Step 2: Make Pancakes
Next, fire up the griddle, spray with non-stick grease and pour 1-2 inch sized dollops onto the hot surface and cook then flip until golden brown on both sides.
Step 3: Make Sammys
Let pancakes cool to room temperature (so the peanut butter and jam does not melt) and spread PB and J onto one pancake round.
Step 4: Enjoy
Finally, top the sammy off with another pancake and garnish with fresh berries.
